2 T. olive oil
½ red bell pepper, chopped
1 bag of peas, carrots, or broccoli, frozen or fresh
1 bag of riced cauliflower, frozen
¼ cup of liquid aminos, coconut aminos, or low-sodium soy sauce
1 t. onion powder
½ t. cayenne pepper
Green onions, chopped
Dash of salt
1 scrambled egg (optional)
Grilled chicken, salmon, shrimp (optional)
Sautee red bell pepper and veggies until tender in olive oil
Mix in cauliflower rice, liquid aminos or soy sauce, and other seasonings—Cook for 30 minutes or until tender. Add in green onions.
Cook egg and grilled protein in separate pans. Add in scrambled egg and grilled protein (chicken, salmon, shrimp). Add a little more liquid aminos or soy sauce if needed.
